If it ain't got any sugar in it, then it gets all puckery within 4-5 years, and tastes of dried everything: leather, fruit, shoe polish. I think Ontario wines should be consumed within three years, and if they are too tannic to begin with, then they will all end up like Bordeaux from 1975.
